Type: still white wine. After soft pressing operations, the fermentation takes place in controlled temperatures steel tanks. It is refined with an at least six-months permanence in bottles.
Grape variety: white grapes blend with Chardonnay prevalence. Breeding system: simple guyot and short pruning to manage an high density plantation of 2500 logs.
Soil: is characterized by a calcareous tufaceous component able to confer to the wine a decisive but balanced sign.
Harvest: completely hand-made and using wooden case.
Properties: shiny yellow color, it hides lime green glares. The glycerin in the glass stretches itself in wide circles; the scent has flowers notes to which take over citrus fruits and candied fruits peel; to the taste stand out a sharp saltiness well integrated with the alcoholic component: a dry tone and almondy closure.
Pairing: ideal as an aperitif, with savory snacks; appetizers, vegetables based vegetarian courses; pickled olives or olive all’ascolana; raw salmon, grilled shellfishes.
